The Sauternes appellation covers nearly 2000 hectares (including the Barsac appellation of 460 hectares) in five communes: Sauternes, Bommes, Fargues, Preignac and Barsac. This region is crossed by the Ciron river, a small tributary of the Garonne which, due to the moisture it brings, is at the origin of the development of the botrytis cinerea , a mushroom that invests each harvested grape, to produce the greatest wines o f Sauternes and Barsac . Botrytis cinerea, responsible for what is called "noble rot", feeds on the water contained in the grape, which will allow the concentration of sugars and natural acids, resulting in a golden and smooth wine , Rich in aromas (honeysuckle, apricot, quince, citrus fruits, exotic fruits, ginger). The vineyards of Sauternes and Barsac are situated on a clay-limestone or limestone subsoil, covered with a layer of gravel.
